Chicken Kiev with fluffy mash and smashed mixed vegetables

Ingredients

1 pack Colonial Farm Chicken Kiev (4 per pack)

8 potatoes, peeled and, quartered

120g chopped butter, separated into two lots of 100g and 20g

1/2 cup milk

1/4 leek, pale section only, washed, dried and thinly sliced

200g (1 1/2 cups) frozen peas

150g chopped beans

150g chopped snow peas

60ml (1/4 cup) chicken or vegetable stock

3-4 leaves chopped fresh mint

Salt and pepper

 

Method

  • Place the Colonial Farm Chicken Kievs in an oven that has been preheated to 200 degrees Celsius and set a timer for 25 to 30 mins.
  • Measure out your ingredients and prepare your vegetables.
  • Put the potatoes in a large saucepan of boiling, salted water for 15 minutes or until tender. Drain and return potatoes to pan. Reduce heat to low and stir for 1 minute. Add 100g of the butter and the milk. Mash until smooth. Season with salt and pepper.  It is now ready to serve and keep warm.
  • Meanwhile, heat the remaining 20g of butter in a medium saucepan over low heat. Add the leek and cook, stirring for 2 minutes or until soft.
  • Put the beans and snow peas in another saucepan. Boil the kettle and pour the water over them.  After 30–40 seconds, strain and place in a bowl.   
  • Add the frozen peas and stock to the leek mix and simmer for 4 minutes or until peas are tender, then mash.
  • Add the beans and snow peas, stir in the mint and season with salt and pepper. Set aside and keep warm until ready to serve.
  • Divide the smashed pea mixture and potatoes amongst the serving plates and place the cooked Kiev’s on top. Alternatively place in the middle of the table and serve yourself.

Handy hints 

  • Stirring cooked potatoes over a low heat dries them out so you end up with a lighter and fluffier mash.
  • Try different herbs with the pea and bean mix (such as thyme, basil, chives or rosemary)
  • You can also make a salad from the cold pea and bean mix and combine with feta, rocket or spinach.  It can be made few days before and can also be reheated.
  • Oven temperatures can vary so watch cooking times.
