Apple Cake

This recipe comes from Brookfarm, one of Australia's premium producers of Macadamia products. It's versatile, easy to prepare and tastes delicious. For a twist, leave the apple skins on or add some wholesome nuts like walnuts, pecans or macadamias.

Ingredients
2 cups sugar
3 eggs
1 ½ cups Brookfarm Macadamia Oil
3 cups plain flour
1 ½ tsp baking soda
½ tsp each cinnamon, nutmeg, clove and salt
1 tsp vanilla extract
3 cups chopped apple
1 cup nuts

Method

  • Mix sugar, eggs, vanilla and then add oil untill completely blended. Sift dry ingredients. Mix in with egg mixture with a wooden spoon Add apples and nuts, mix with a wooden spoon.
  • Grease and flour a bundt pan and add batter. Bake in 180° oven for 1 ¼ hours or until a skewer comes out clean.
  • Decorate with a drizzle of simple white icing and top with extra nuts.
