Easy - Med - Hard


Easy to make and incredible to taste - grab some Aussie-grown produce and make yourself some Italian-style bruschetta!


  • 4 tomatoes
  • 1 red onion
  • 1 bunch of fresh basil
  • 1 loaf of ciabatta bread
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • Oregano
  • Balsamic glaze


  1. Pre-heat oven to 200°C
  2. Slice ciabatta bread into 3cm slices, drizzle olive oil on each side and place on baking sheet. Toast until golden (5-10 minutes) and turn halfway through.
  3. Finely chop the tomatoes and onion. Mix together in a bowl and combine with the olive oil, salt, balsamic vinegar and a pinch of oregano.
  4. Top each slice of bread with a generous spoonful of the tomato and onion mixture. Top with fresh basil leaves and a drizzle of balsamic glaze to serve.
