Caramello Koala Ice Cream Cake

Combining layers of rich cake, creamy caramel swirl ice cream, and gooey caramel, this easy-to-make treat is topped with adorable Caramello Koalas for a show-stopping finish. A deliciously sweet creation that will delight both kids and adults, thanks to the team at Envirochoice!

Ingredients

  • 1 packet of cake mix of your choice (and additional ingredients instructed - eggs, butter, milk)
  • 1L caramel swirl ice cream
  • 395g (1 tin) ready-made caramel
  • 12 pack of Caramello Koalas

Method

  1. Prepare the cake mix according to the packet instructions. Use a loaf tin lined with baking paper for a perfect shape. Allow the cake to cool completely, then cut it horizontally into three even layers.
  2. Clean and dry the loaf tin, then line it with Capri Clingwrap or clingfilm, ensuring there’s enough overhang to cover the top.
  3. Start with a layer of cake at the bottom of the tin and spread a generous layer of the ready-made caramel over the cake. Add a layer of caramel swirl ice cream, smoothing it evenly. Repeat the layers (cake, caramel, ice cream) until all ingredients are used, finishing with a cake layer on top.
  4. Cover the top with the Capri Clingwrap overhang. Place the cake in the freezer for at least 4 hours or until fully set.
  5. Remove the ice cream cake from the tin by pulling the cling wrap. Carefully place it onto a serving plate and peel off the cling wrap.
  6. Top with additional caramel and decorate with Caramello Koalas. Slice and serve immediately!
