Easy - Med - HardCaramello Koala Ice Cream Cake
Combining layers of rich cake, creamy caramel swirl ice cream, and gooey caramel, this easy-to-make treat is topped with adorable Caramello Koalas for a show-stopping finish. A deliciously sweet creation that will delight both kids and adults, thanks to the team at Envirochoice!
Method
- Prepare the cake mix according to the packet instructions. Use a loaf tin lined with baking paper for a perfect shape. Allow the cake to cool completely, then cut it horizontally into three even layers.
- Clean and dry the loaf tin, then line it with Capri Clingwrap or clingfilm, ensuring there’s enough overhang to cover the top.
- Start with a layer of cake at the bottom of the tin and spread a generous layer of the ready-made caramel over the cake. Add a layer of caramel swirl ice cream, smoothing it evenly. Repeat the layers (cake, caramel, ice cream) until all ingredients are used, finishing with a cake layer on top.
- Cover the top with the Capri Clingwrap overhang. Place the cake in the freezer for at least 4 hours or until fully set.
- Remove the ice cream cake from the tin by pulling the cling wrap. Carefully place it onto a serving plate and peel off the cling wrap.
- Top with additional caramel and decorate with Caramello Koalas. Slice and serve immediately!
