Easy - Med - HardMoist Banana Bread
Ideal for weekend baking, this Banana Bread recipe is great for school lunches, an everyday sweet treat, or a quick snack on the go! Thanks to the team at Little Bumble.
Method
- Preheat oven to 180°C. Line a 23 x 13cm loaf pan (6-cup capacity) with baking paper or a baking mat, letting it hang over both sides.
- In a bowl, mix the flour, baking powder and baking soda then set it aside.
- In another bowl, mix the mashed bananas, coconut milk and lime (or lemon) juice and set it aside.
- In a third bowl, cream butter and sugar with an electric mixer. Add egg and vanilla and beat until smooth. Then at a low speed, add dry ingredients alternately with banana mixture until all combined.
- Pour into the prepared pan that has been lined. Bake for about 1 hour or until a wooden skewer inserted in the centre of the loaf comes out clean.
- Let the loaf cool on a wire rack before slicing.
