Paprika Roast Chicken with Potatoes

Impress your dinner guests with a delicious whole chicken dish! This Paprika Roast Chicken with Potatoes recipe is perfect if you have a woodfire oven you're itching to use. Thanks to the team at Polito Wood Fire Ovens.

Ingredients

  • 1 x large chicken, butterflied
  • Hot smoked paprika
  • Olive oil
  • Sea salt
  • 500g chat potatoes
  • Rosemary

Method

  1. Set your oven to 200° C with a low flame. This recipe is best done in a woodfire oven from Polito Wood Fire Ovens!
  2. Pre-boil your potatoes in salted water until tender, marinate in olive oil sea salt and rosemary.
  3. Rub the butterflied chicken with olive oil, paprika and salt until it creates a paste on the chicken.
  4. Place the chicken laying flat, skin-side down on a large roasting tray.
  5. Place all the potatoes around the chicken and put in the oven for 45 min to 1 hr.
  6. When chicken is cooked, remove from oven, and place the potatoes aside. (Tip - use a probe to ensure internal temp is around 75° C)
  7. Flip your chicken skin side up on your roasting tray.
  8. Throw a small piece of kindling on your fire to create a small flame to crisp your skin.
  9. Add the chicken back to the oven watching closely while the skin crisps up.
  10. When the skin is crispy, take out and enjoy your delicious meal!
