Easy - Med - HardPumpkin & Pomegranate Salad
A beautiful summer salad that includes all the classic colours of Christmas - this Pumpkin & Pomegranate Salad recipe is the perfect side for the holiday season.
Ingredients
For the salad:
- 600g pumpkin (seeded and cut into 2cm wedges)
- 2 tbsp olive oil
- 250g cherry tomatoes (halved)
- 1 avocado (thinly sliced)
- ½ orange (peeled and thinly sliced)
- 100g rocket
- 100g baby spinach
- 75g pomegranate arils/seeds
- Salt and pepper
- Handful of walnuts
- Optional: 100g feta cheese (crumbled)
For the dressing:
- 1⁄4 cup olive oil
- 1⁄4 cup red wine vinegar
- 2 tbsp maple syrup
- 2 tsp wholegrain mustard
Method
- Preheat oven to 200°C. Toss the pumpkin wedges with olive oil and salt and place on a large oven tray. Roast for 15-20 minutes until golden and tender.
- Combine the dressing ingredients in a bowl or jug. Stir until combined, and add salt and pepper to taste.
- In a large bowl, mix together the rocket, spinach, avocado, tomatoes and orange. Gently add in the pumpkin so that it doesn't become squished. Drizzle dressing and gently toss to combine. Top with pomegranate, walnuts and feta cheese.
