Easy - Med - HardChicken Tacos with Pico de Gallo
Need a quick, easy and delicious dinner to cook on the barbecue this weekend? Try some chicken tacos with a simple Pico de Gallo to top them off - thanks to the team at Heatlie Barbecues!
Ingredients
Spice mix:
- 1 tsp chilli powder
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp garlic powder
- Salt and pepper
Tacos:
- 1 chicken breast (boneless, skinless)
- Canola oil
- Pack of flour or corn tortillas (mini)
Pico De Gallo:
- 1 small white onion
- 2 tomatoes
- 1 bunch fresh coriander
- 1 Lime
- Pinch of sea salt
Method
- Combine all spices together and rub them into the chicken breast, achieving thorough coverage. Set aside.
- Dice tomatoes and onions, combining with coriander, the juice of lime and a pinch of salt. Set aside to let the flavours soak in.
- Prep your barbecue for the chicken. For the best results, make sure it's from Heatlie Barbecues!
- Place chicken breast on barbecue and cook through until internal temperature reaches 75°C.
- As the chicken is nearing completion, place tortillas on your barbecue to lightly toast them. You'll know they're done once air bubbles start to form on their surface. Flip and repeat.
- Once the chicken is complete, transfer to chopping board and dice into small chunks for easy taco filling.
- Top with Pico de Gallo and enjoy!
