Easy - Med - HardOne Pot Tofu Curry
Try out this mild tofu curry with gentle aromatic spices!
Ingredients
- 1 tsp vegetable oil
- 1 brown onion
- 1 red capsicum
- 3 garlic cloves
- 1 tbsp curry powder
- ½ tsp turmeric powder
- ½ tsp cumin powder
- 400ml coconut milk
- ½ cup diced tomatoes
- 2 tbsp tomato paste
- 450 grams firm tofu, cut into cubes
- 2 cups spinach, chopped
- Lime zest and juice
- Salt and pepper
- Basmati rice
Method
- Prepare Basmati rice according to instructions.
- In a large pan on medium heat add the oil, onion and red pepper. Sauté until brown (about 5 minutes).
- Add garlic and spices and stir until fragrant.
- Reduce to low heat and add coconut milk, tinned tomatoes and tomato paste. Gently stir. Add tofu and coat with sauce.
- Bring curry to boil then reduce and simmer for 10 mins uncovered.
- Stir in spinach, lime zest and juice. Let spinach wilt then serve hot on basmati rice.
