Pink Pancakes

Brighten up your mornings with a colourful twist on a modern recipe. Try out these fun and fluffy Pink Pancakes – thanks to the team at Kiddies Food Kutter!

Ingredients

  • 1 cup milk
  • 1 ripe banana
  • 1 tbsp honey
  • 1 cup Greek yoghurt
  • 1 cup frozen raspberries
  • 1 egg
  • 1 cup desiccated coconut
  • 1 ½ cup wholemeal self-raising flour

Method

  1. Cut up the banana so that it’s easy to blend. Get the kids involved safely by using a Kiddies Food Cutter!
  2. Add the milk, banana, honey, yoghurt, raspberries and egg to a blender and blend until smooth.
  3. Pour the mixture into a bowl and whisk in flour and coconut.
  4. Pour ¼ cup of batter in a lightly greased frypan on medium-high heat. Cook for 2 minutes, or until bubbles appear.
  5. Flip the pancake and cook for 1 more minute.
  6. Set the pancake aside to cool off on a plate.
  7. Repeat until you have used up all the batter.
  8. Serve with fresh berries and sliced bananas.
  9. Enjoy!
