One Pot Tofu Curry

Try out this mild tofu curry with gentle aromatic spices!

Ingredients

  • 1 tsp vegetable oil
  • 1 brown onion
  • 1 red capsicum
  • 3 garlic cloves
  • 1 tbsp curry powder
  • ½ tsp turmeric powder
  • ½ tsp cumin powder
  • 400ml coconut milk
  • ½ cup diced tomatoes
  • 2 tbsp tomato paste
  • 450 grams firm tofu, cut into cubes
  • 2 cups spinach, chopped
  • Lime zest and juice
  • Salt and pepper
  • Basmati rice

Method

  1. Prepare Basmati rice according to instructions.
  2. In a large pan on medium heat add the oil, onion and red pepper. Sauté until brown (about 5 minutes).
  3. Add garlic and spices and stir until fragrant.
  4. Reduce to low heat and add coconut milk, tinned tomatoes and tomato paste. Gently stir. Add tofu and coat with sauce.
  5. Bring curry to boil then reduce and simmer for 10 mins uncovered.
  6. Stir in spinach, lime zest and juice. Let spinach wilt then serve hot on basmati rice.
