Aussie Shepherd’s Pie

A golden oldie that’s perfect for drizzly weather – try out our take on the classic Shepherd’s Pie!

Ingredients

  • Salt and pepper  
  • ½ cup butter 
  • 3 large potatoes (peeled and chopped) 
  • 1 onion (chopped) 
  • 1 to 2 cups mixed vegetables (diced carrots / corn / peas) 
  • 500g beef mince 
  • ½ cup beef broth 
  • 1 tsp Worcestershire sauce 
  • Garnish (dill / parsley)

Method

  1. Preheat oven to 200 °C. 
  2. Place the potatoes in a medium sized pot. Cover with water, add 1 tsp of salt and bring to boil. Reduce to simmer and cook until tender (20 minutes). 
  3. Once potatoes are soft, place in a bowl with ¼ cup of butter. Mash with a fork, or potato masher, and add salt and pepper to taste.  
  4. Bring a large pan to medium heat and melt ¼ cup of butter. Add the onions and stir for 5 minutes. Add vegetables and cook until tender (6-10 minutes). 
  5. Add the beef to the pan, break it up and cook until the beef is no longer pink. Add Worcestershire sauce and broth and season with salt and pepper to taste. 
  6. Bring the broth to a simmer and reduce heat to low for 10 minutes. 
  7. In a large baking dish, spread out the meat and vegetables. Cover with the mashed potatoes and spread out with a fork. 
  8. Bake at 200 °C for about 30 minutes, until brown and bubbling. 
  9. Top with garnish and enjoy!
