Ingredients
125g Butter
1 tablespoon dijon mustard
1 tablespoon lemon juice
2 cloves garlic, crushed
2 - 3 tablespoons chopped parsley, plus extra to garnish
450g medium prawns, shells removed, with tails attached and deveined
Salt and pepper to taste
Method
- Place the butter, dijon mustard, lemon juice, garlic and parsley in a shallow pan and heat gently until the butter melts completely.
- Add the prawns to the mixture, tossing to coat. Cook gently, stirring, for about 5 minutes, until the prawns are pink and opaque.
- Season to taste with salt and pepper and sprinkle with parsley.
- Serve with crusty bread.
