Ingredients
- 170g granulated raw sugar
- 170g soft brown sugar
- 55g butter
- 55g good quality lard
- 1tsp vanilla extract
- 1 Fresha egg
- 275g plain flour
- ½ tsp baking soda
- ¼ tsp salt
- 200g milk chocolate chips
- 50g white chocolate chips
- 50g plain chocolate chunks
Optional
- 120ml (4 fl oz) Baileys Irish Cream
Method
- Preheat the oven to 180 °c (gas mark 4)
- In a large bowl, beat together the butter and lard. Add sugars and beat until creamy (or use an electric mixer)
- Add the egg and vanilla (along with Baileys if desired) and mix well
- Mix the flour, baking soda and salt in gradually until a dough form
- Add the chocolates and stir in
- Line baking trays with parchment and use a table spoon to scoop the mixture onto the baking tray - about 6 to a tray (they do spread!)
- Bake for about 15 minutes and cool on a wire rack
