Garlic Prawns

Perfect for all year round, and guaranteed to leave no leftovers! This quick and easy recipe is thanks to the tem at Ballantyne!

Ingredients

  • 125g butter (we recommend using Ballantyne Spreadable Lighter with Avocado Oil)
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 2 cloves garlic, crushed
  • 2 - 3 tablespoons chopped parsley, plus extra to garnish
  • 450g medium prawns, shells removed, with tails attached and de-veined
  • Salt and pepper to taste
  • Crusty bread to serve

Method

  1. Place the butter, dijon mustard, lemon juice, garlic and parsley in a shallow pan and heat gently until the butter melts completely.
  2. Add the prawns to the mixture, tossing to coat. Cook gently, stirring, for about 5 minutes, until the prawns are pink and opaque.
  3. Season to taste with salt and pepper and sprinkle with parsley.
  4. Serve with crusty bread.
