Homemade Mayonnaise

Have you always wanted to learn how to make your own mayonnaise? Now's your chance! This recipe takes about as long to make as it does to read...OK, maybe a few minutes longer...but we guarantee it's quick, easy and delicious.

Ingredients

  • 1 egg yolk
  • 1 cup of olive oil
  • 1 teaspoon of mustard sauce
  • The juice of one lemon
  • 1 teaspoon of vinegar, to keep on hand should you need to loosen the mixture
  • Sea salt to taste
  • Optional: 1 garlic clove, very finely chopped

Method

  1. Whisk the egg yolk well
  2. Whisk in the mustard
  3. Very slowly, whisk in half of the olive oil (pouring too fast affects the texture, so take your time)
  4. Whisk continuously for about 3 minutes, until the mixture has thickened up
  5. Whisk in the lemon juice
  6. Very slowly whisk in the remaining olive oil until well combined
  7. Whisk in the sea salt to taste
  8. Add garlic if desired
  9. Add the vinegar if your mayonnaise is too thick
  10. Enjoy!
