Savoury Bacon & Cheese Scones

Because scones are the treat that just keep on giving. Savoury or sweet? You bet they can do both!

Ingredients

  • 3 cups self-raising flour
  • 80g softened butter
  • Pinch of salt
  • 1 Ā¼ cup of milk
  • 1 cup grated cheese
  • 3 rashers of bacon, finely choppedĀ 
  • 1 tbsp olive oil

Method

  1. Preheat oven to 200C and line a baking tray with baking paper
  2. Heat a non-stick frying pan over a medium to high heat. Add olive oil and allow to heat then add the finely chopped bacon and cook until golden
  3. Transfer bacon to a plate lined with paper towels and allow to cool
  4. Sift the flour into a large bowl. Use your fingertips to rub the butter into the flour until a breadcrumb-like mixture forms
  5. Add the cheese and bacon to the mixture
  6. Make a well in the centre of the mixture then add 1 cup of milk. Mix with a butter knife until combined, forming a soft dough. Add more milk if necessary
  7. Turn your dough onto a lightly floured baking mat or kitchen benchtop. knead the dough gently until smooth, taking care not to over work the mixture
  8. Pat the dough down until approximately 3cm thick. Using a round cookie cutter, press down to cut 15 rounds of dough
  9. Place dough rounds onto your baking tray, ensuring enough space is left for the scones to expand as they cook
  10. Glaze the rounds with a small amount of milk
  11. Bake for 25 minutes or until golden brown
  12. Serve warm from the oven with a little extra butter
