Zucchini & Parmesan Chips

We think we've found our new favourite side dish! These tasty little morsels are quick and easy and are great as salad toppers or snacks too.

Ingredients

  • 2 medium zucchinis, chopped into 1cm slices
  • 2 eggs, whisked
  • 1 cup of breadcrumbs mixed with 1/2 cup of parmesan cheese
  • 1/2 cup of flour
  • 1/2 cup vegetable oil (if frying)

Method

  1. If frying, put a skillet on the stovetop, pour in your oil and let it heat up. If baking, set the oven to 220 degrees Celcius and line a baking tray.
  2. Set up bowls for each ingredient, then dip your zucchini slices into the flour, egg and breadcrumbs.
  3. If frying, cook them in small batches, for about a minute on each side and transfer to paper towel to drain. If baking, cook them for around half an hour or until golden brown.
  4. Serve immediately.
