Honey Soy Chicken and Slaw

Spicing up your dinner menu can be as easy as a new marinade and dressing! This recipe for honey soy chicken and shredded salad is simple but scrumptious.

Ingredients

  • 4 small chicken breasts
  • 1/3 cup Honey Soy Marinade
  • 2 teaspoons sesame seeds, lightly toasted, for sprinkling on cooked chicken
  • ½ cup  Avocado & Garlic Salad Dressing
  • 2 cups finely shredded red cabbage
  • 2 cups finely shredded wombok
  • 1 carrot, cut into matchsticks
  • 50g snow peas, finely sliced
  • 2 tablespoons mint, finely chopped
  • Lemon wedges, for serving

Method

  1. Place chicken breasts into a container and coat with Honey Soy Marinade.
  2. Cover and refrigerate for 30 mins – 1 hour.
  3. Cook chicken breasts on a pre-heated barbecue plate or griddle for 5 minutes each side, or until cooked through.
  4. Sprinkle chicken with sesame seeds and place on a serving platter.
  5. Combine salad ingredients, dress with Avocado and Garlic Dressing and place in a serving bowl to accompany chicken.
