Apple Cake

Versatile, easy to prepare and tastes delicious. For a twist, leave the apple skins on or add some wholesome nuts like walnuts, pecans or macadamias.

Ingredients

  • 2 cups sugar
  • 3 eggs
  • 1 ½ cups Macadamia Oil
  • 3 cups plain flour
  • 1 ½ tsp baking soda
  • ½ tsp each cinnamon, nutmeg, clove and salt
  • 1 tsp vanilla extract
  • 3 cups chopped apple
  • 1 cup nuts

Method

  1. Mix sugar, eggs, vanilla and then add oil until completely blended. Sift dry ingredients. Mix in with egg mixture with a wooden spoon Add apples and nuts, mix with a wooden spoon.
  2. Grease and flour a cake pan and add batter. Bake in 180° oven for 1 ¼ hours or until a skewer comes out clean.
  3. Decorate with a drizzle of simple white icing and top with extra nuts.
