Stained Glass Window Cake

This Stained Glass Window cake is another fabulous Christmas recipe. Packed with fruit and nut goodness, it's sure to be a crowd pleaser this festive season.

This Stained Glass Window cake (otherwise known as a Bishop's Cake) is another fabulous Christmas recipe. Beautiful to look at and packed with fruit and nut goodness, it's sure to be a crowd pleaser this festive season.

Ingredients

200 gm glacé cherries - mixed colours look good
150 gm glacé apricot cut into pieces
150 gm glacé pineapple cut into pieces
125 gm glacé pears
150 gm dates
125 gm hazelnuts
125 gm brazil nuts
125 gm almonds
100 walnuts
1/2 cup self raising flour
1/4 cup plain flour
1/2 cup brown sugar
1/4 cup castor sugar
3 eggs
1 tea spoon vanilla
100gm butter , melted
1 tea spoon mixed spice

 

Method

  • Melt butter then cool
  • Beat the eggs and sugar together until light and pale. 
  • Add butter to eggs and sugar
  • Mix all fruit in a large bowl
  • Add butter mix
  • Add sifted flour and all spice
  • Place into a loaf tin  ( 11cm x 21.5 cm) which has been lined with baking paper
  • Cook in a slow oven for approximately 1 1/2 hours. A skewer should come out clean
  • Turn out to cool on a rack then wrap in foil

 

Notes

  • This cake will keep for about 3 weeks
  • This recipe can be adjusted to suit personal preference. Instead of purchasing lots of different glacé fruit you may like to just buy one type. The nut selection can also be adjusted to suit personal taste.
